Introduction In this simulation, you will be testing the effect of environmental factors on the activity of the enzyme lactase. Lactase is a digestive enzyme produced in the small intestine that is a catalyst for the breakdown of lactose. Lactose (C12H22O11) is a disaccharide sugar found in milk that is composed of two monosaccharides; galactose and glucose. The enzyme lactase facilitates the cleavage (separation) of lactose into the individual subunits of galactose and glucose. See Figure 1. The first step in this simulation involves making predictions. You are asked to predict the effect of 3 variables (temperature, pH, and substrate concentration) on the reaction rate. a. To make predictions, you need to draw how you expect the reaction rate at different temperatures, pH levels, and substrate concentration.
